The Poké Bowl
It can be made with several different ingredients according to your desires. Sweet and salty, you can mix the flavors. Here, it will be served with salmon, rice, avocado, radish, cucumber, peas and sesame seeds. A perfect balance between proteins, starches, and fatty and dried vegetables. It will only take you 10 minutes to complete.
Ingredients: 120 g cooked rice (or lentils), 1 tsp. rice vinegar, 100 g fresh salmon, a few strips of avocado, radishes, a few slices of cucumber, a small portion of fresh or thawed peas, 1 tsp. fresh herbs (depending on your taste coriander, chives, chervil) and a pinch of sesame seeds if you like. Then mix the rice and rice vinegar in a large bowl. Dice the raw salmon. Finally prepare the raw vegetables and dress harmoniously on the poké bowl. Adjust the quantities to your hunger, while remaining reasonable. Sprinkle with chopped fresh herbs and sesame seeds.

Hello friends, Papy makes you travel towards Pornichet / La Baule and reveals one of his brand new dishes, present from the opening, Poke Baule. Healthy and appetizing dish, Poke Baule will refresh you during the beautiful summer days. For 4 homemade Poke Baules you will need: • 400g of salmon steak • 2 avocados • 600g of quinoa • 1 cucumber • 20cl of sweet or savory soy sauce according to your taste • Some radishes • Black and / or white sesame • Salt and pepper Proceed as follows: 1) Cut the diced salmon 2) Place it in a bowl and add the chosen soy sauce and a few pinches of sesame, 3) Leave to marinate for 6 hours. Do not add lemon juice which could cook your salmon, 4) Wash the quinoa using a colander or a Chinese, 5) Cook it in a pan for 10min with 2x its volume in water, 6) Drain the quinoa and reserve it for later, 7) Cut the avocados in half and remove the skin and the stone, 8) Cut the cucumber and the radishes into thin slices, 9) Place in bowls or soup plates, quinoa at the bottom, then the other ingredients according to your imagination, 10) Sprinkle with sesame. For this recipe, our chef has added a few sprouts of mung beans. You can also add your ingredient and customize your Poke Baule. Dress with a vinaigrette or the sauce of your choice. What about dessert? Don’t panic, it’s allowed. Fall for dessert with chia seeds. Chia seeds are the forgotten of the kitchen, yet they have many virtues and allow to have fun at will.
For two people, you need: 40 cl of rice milk, 2 tsp. chia seeds, 20 g whole sugar, 3 drops of sweet orange essential oil, 150 gr of fruit, for example blueberries or pineapple. Then just allow the chia seeds to swell in the rice milk for 1 hour and then add the essential oil and the whole sugar directly to the bowl, then mix. Mix the fruits and incorporate them into the preparation. Keep some for decoration.
