We seriously still have a ridiculous amount of apples. Who would have known it would be so hard to use 17 pounds of apples? I’m going to start baking pies and just handing them out to strangers.
One easy way we have discovered to use the apples is to make apple pancakes. Dude, Claire loves these things. She ate over half of the batch today.
Ingredients
- Apples
- Pancake mix
Directions
- Peel and slice your apples. Last Sunday I cored the apples and then sliced them into rings and that was pretty fabulous. Today I was lazy and just cut the apples into very thin wedges, a bit faster and easier but just as awesome.
- Mix up some pancake batter a bit thicker than normal. I use instant pancake mix (and it’s ridiculous how much I love it) and I just added a bit more powder, works out fine.
- Spray a skillet with cooking spray and then heat on medium. Dip an apple slice into the pancake batter and then place on the skillet, I usually fill the pan and leave about 1-inch between each slice so I can flip.
- Once brown on both sides, remove from heat and butter (or whatever you put on your pancake). Allow to cool for a few minutes then serve, these are best warm but not stupid hot.
Yay, apple pancakes! Seriously easy and delicious and Claire’s new favorite thing in the whole world (move over quesadillas).

What pisses you off?: Other drivers. I have terrible road rage.
When you’re upset, you: When I’m angry upset I scrub stuff or exercise, it helps to clear my mind and calm down. When I’m sad upset I like to take a hot shower, very refreshing.
Name your favorite pet: I’ve loved all of my pets and all of the rescues my family have fostered and cared for. Last summer we had to rehome our beagle, Maggie, because she deserved more than we were able to provide her. While it is my belief that any animal you bring into your home belongs there forever, I also believe that it’s selfish to keep an animal you can’t fully provide for. Our house at the time had a very small non-fenced yard and with both Andrew and I working and a newborn we didn’t have enough time to get Maggie the exercise she needed and craved. This led to her escaping every chance she gotm this was putting her in serious danger. She now lives with a large family in a rural area with tons of room to roam and run and lots of kids to chase after. I miss Maggie everyday and I worry that she may have been hurt when she went to her new home, but I know she’s happy now.
Black or white?: Black, white stains so easily and I’m already not the most graceful person ever. Add two babies to the mix? Yeah, I wear black almost every day.
Name your biggest fear: Fire. My house burned down when I was in 10th grade. We lost two dogs and pretty much everything we owned. I can stand to be around fire, I love bonfires and camping, but my biggest fear is dying in a fire.
Name your best feature: My sense of humor.
Everyday attitude: The world keeps moving, even if today is a bad day there is always tomorrow.
What is perfection?: Snuggling in bed with Andrew, Claire and Logan and good book.
Guilty pleasure: Napping. I love to nap, I could nap way more than should be physically possible.
Seven things about myself:
- I have no idea what I want to be when I grow up.
- Sam Elliott is my absolute definition of handsome.
- I hate leather. I think it’s completely pointless in this day and age to kill an animal simply because you want a coat.
- I will be an adult one day, but not today.
- I laugh at almost every joke I tell, especially when I’m typing it out. I think I’m far funnier than I probably really am.
- I have the the most terrible sinus pressure right now and I hate all small, grubby little children who get my kids sick who then get me sick.
- Seven is one of my favorite numbers. The other is 13.

Sometimes we all need a bit of perspective. Today at the grocery store Claire ran away from me in the parking lot and while I was chasing her down Logan wrapped a chunk of my hair around his chubby, evil fingers and tried to detach it from my scalp. Once I had them both wrangled in a shopping cart and bag of frozen peas pressed to my scalp I tried to go about my shopping but it seemed like these kids wanted my head to explode.
It’s so easy to get caught up in the day to struggles, especially when one of those struggles is keeping your almost 2-year-old clothed and diapered so she does not urinate on your carpet. Or worse. Most often worse. But now and then a bit of perspective is great.

I can’t remember exactly how I came across Courtney’s blog, “EB”ing a Mom, but sweet waffle on a stick I was immediately glued to my screen. I read through nearly every post and page that very night, and my heart was simultaneously broken and uplifted. Courtney’s son Tripp was born with junctional epidermolysis bullosa, a condition that causes even the slightest friction to damage the skin and create blisters and sores.
Tripp is a handsome and brave soul, and I cry when reading about him because it’s hard to understand why a child should have to be in pain but also because his strength completely humbles me. Tripp has a gastric feeding tube to receive nutrients and a tracheotomy to help him breathe. Courtney writes on the page about Tripp that he went through many surgeries to deal with the corneal abrasions and tissue growth over his eyes, but eventually they had to stop after the surgeries started to do more harm than good. As Courtney advises, Tripp is most likely blind, only able to see lights and shadows at best, because of the tissue that has grown over his eyes. And still that beautiful boy smiles. To the right is the smile Tripp gave the camera when Courtney told him “Smile for Nanny!”. My word, the strength and beauty of Courtney and her son amaze me and I hope for the very best for Tripp. He has been so much stronger in his short life than I could ever say I have been, and he deserves all of the love and caring it is so obvious he receives from his amazing mother. I hope I am even half as strong and courageous as Courtney.
